Southwestern Shredded Chicken

This is a versatile recipe for chicken. Once prepared, you can use the chicken in tacos, casseroles, beside vegetables on a plate, on sandwiches, etc. This particular recipe has a southwestern flair, but you can change out the flavor packet and make varieties based on your tastes and preference.

The easiest way to prepare this is by using an Instant Pot. If you do not have one, I highly recommend getting one.

Southwestern Shredded Chicken

This easy to make chicken is low fat, flavorful and full of protein. It is so yummy and can be used in so many different ways.

  • Instant Pot
  • Kitchen Aid Stand Mixer
  • 4 breast chicken breasts (boneless, skinless )
  • 1 packet taco seasoning
  • 1 cup water
  • 1 can Ro-Tel, drained (optional)
  1. Add raw chicken breasts into the bottom of the Instant Pot

  2. Pour remaining ingredients over the top

  3. Close lid of Instant Pot and set it to Poultry on 18 minutes

  4. Once done cooking, do an immediate release of steam

  5. Allow to cool for a few minutes. Put the cooked ingredients into your Stand Mixer with the dough paddle. Allow the dough paddle to "shred" the chicken for you.
