You will need a large instant pot for this recipe. You can use a slow cooker, if you wish. I prefer pressure cookers because they cut down on cooking time dramatically. I use mine for SO many things every week. (In fact, I have 2 😉 )
White Chicken Chili
This chili is packed with protein and healthy goodness. It's great to make ahead and have available for cool fall and winter evenings.
- pressure cooker
- 6 chicken breast
- 3 cup chicken broth
- 1 onion
- 2 cans green chili peppers
- 1 tsp minced garlic
- 4 cans white northern beans
- 1/2 tsp oregano
- 1/2 tsp cumin
- 3/4 tsp cayenne pepper (optional)
Chop chicken breasts and onions.
Saute in pressure cooker (on saute setting) with 1/2 cup of broth, peppers and garlic.
Add remaining ingredients.
Add extra water if the pot is not full to the fill line.
Cook on soup setting for 12 minutes.
