Southwestern Shredded Chicken

This is a versatile recipe for chicken. Once prepared, you can use the chicken in tacos, casseroles, beside vegetables on a plate, on sandwiches, etc. This particular recipe has a southwestern flair, but you can change out the flavor packet and make varieties based on your tastes and preference.

  • instant pot
  • 4 chicken breasts
  • 1 packet taco seasoning
  • 1 cup water
  • 1 can diced tomatos and peppers, drained ((AKA rotel))
  1. Add all ingredients to the pressure cooker

  2. Seal pressure cooker

  3. Set on poultry setting for 18 minutes

  4. When timer goes off, do an immediate release (use caution)

  5. Shred chicken by mashing it with a masher, cutting it with kitchen shears or lightly mixing it with beaters
